1 block extra firm or firm tofu
1 can black beans, rinsed
1 cup corn
1 can diced tomatoes
1/2 onion
3 cloves garlic
2 scallions, chopped
1 jalapeno
1 bunch cilantro
1 lime
1 bell pepper
cumin, chili powder, cayenne pepper, salt, pepper to taste
Drain tofu by pressing between two plates, with the top one weighted down. Chop onion and saute in a cooking spray until soft, then add chopped jalapeno, garlic, corn and bell pepper. Crumble in tofu and cook until hot. Add tomatoes, black beans, scallions, lime juice and seasonings. Cook through, then add cilantro. Makes about three servings - you can top with cheese, but honestly, I couldn’t even taste it so I think I’d skip it next time.

I make this same thing, but with eggs- so I’ll definitely have to try it with tofu!

You mean the barbeque one, right? It’s not really a recipe. It’s one of those whole wheat roll-up things (I think that’s what they’re called, it’s just like a wrap but square) with a Gardenburger Riblet on top (cook the riblet first) and then mozzarella cheese, scallions and cilantro. Super easy.
