Man. I had a day. Let’s just say there was no time for snacking. I’m lucky I ate lunch. Oh, and I did grab an iced coffee at one point, but I forgot to take a picture.
My mom watched Jack for us while we were at the wedding, and when we stopped by to pick him up on the way home yesterday, she gave me a box full of food. This happens rather frequently. I am not complaining. We made off with zucchini, yellow squash, cucumbers, approximately 27 peaches, a pear, a block of cheddar cheese, some crackers, and a small carrot loaf. This is good because otherwise, we would have had to eat potatoes for dinner tonight. And I do mean only potatoes. I’m not even sure we have ketchup.
Instead, I threw a bunch of stuff in a pan. A zucchini, a squash, some leftover chick peas, a can of black beans, some tomato sauce, garlic, onions, cumin, chili powder, paprika, and cayenne pepper:
I intended to put this on some whole wheat tortillas we have and make tacos, but for some reason, Chris has an aversion to tortillas. Possibly because for the first few years we lived together, I made burritos at least once a week. Sometimes twice. It was the only thing I knew how to make. Well, except for spaghetti, which basically filled in the other five days.
We don’t eat that anymore either.
Anyway, at his request I threw it in bowls instead and added some of my mom’s cheddar. Not bad, especially with lots of the cheese.

I used to alternate between baked ziti and “cheesy rice casserole.” Then I would learn how to make something new and I would make the shit out of it for like three weeks until we got literally ill at the sight of it.
Oh, the good old days.
Mmm. Veggie and bean bowls are great as is, but adding cheese just makes everything amazing and complete.

You’ve given me a ray of hope. Everything I can cook as of this day are 1) MAc&cheese and 2) Mexican quesadillas. Kind of the same but different.
And now you’re preparing these AMAZING dishes. That gives me hope. (And my parents too, because I’m off to Europe next year).
Are you begging me to leave you a post? Really be honest with your readers, you ate mexican at least 6 nights out of the week! And now it is probably like 4 out of 7. I know becauase whenever we talk it just so happens that you are making some sort of mexican meal. I actually think that you are taking pictures of other peoples food to make it look as if you eat other varieties of food. It is time that you come out of the mexican closet. Oh, also I think that I should get the cookbook because I am your friend

in my college apt all we survived off of was tacos and pasta so i can definitely relate, well and pizza takeout…

I love meals that are thrown together like this - I normally don’t have the courage to experiment fully (worried this won’t go with that, etc. and so forth), so props to you!
This is kind of random but. A: I love this blog. I sit at work and laugh out loud at my desk and my co workers all think iv gone loony. And B: about making the same stuff over and over. It just made me remember how my friend and i had our first apartment out of the dorms in college, and would make dinner for ourselves earlier in the evening (chicken, a can of mandrin oranges and a bottle of bbq sauce in a skillet then elegantly placed in a tortilla to be specific) and then because we thought it was such a hit we would invite all our friends from the bar over to our place for the same meal about 2:30 am. We did this more than a few times, i dont know if it was because we had the ingredients around or because we had already made it once that day we figured we could man it again snockered.

Coriander is used in a lot of mexican food. I always put it in my Mexi-style dishes. I also put cumin and coriander in my quacamole! Try it with beans… it is so good. I think I like it even better than cumin, though I always use both! They are similar…very earthy, but not “hot” spicy
