I’m in trouble

Oh man. I made these cookies tonight, and there is no turning back. Thank god I had the foresight to cut the recipe down. I essentially made a fourth of it, and ended up with three small cookies and three teeny tiny cookies. I also only used half maple syrup and half honey, because I’m cheap and maple syrup, unfortunately, is not.
THEY ARE SO GOOD. And also relatively healthy, I mean the only ingredients are the maple syrup/honey, oats, cocoa powder and peanut butter. We’ve got whole grains, antioxidants, protein, and healthy fats! Who the hell knew that these things could combine and create such magic? Not me, or I’d have been mixing these babies up every day. And that, actually, is the problem here - now that I know that I can do this, and even, really, create single servings, all hope is lost. I may never live another day without eating one of these cookies.

That one on the left? Chris took a bite out of it before I could get there with the camera. We ate all six, by the way. I ate the three very small ones and he had the three slightly larger ones. I also licked the bowl pretty vigorously, so I think we’re about even.
Before cookies, we had dinner, of course. We’re not totally out of control. We had polenta, which I bought in a roll from Trader Joe’s. I’m actually a little scared of making polenta on my own because the one time I did, it was a total disaster. I grilled it with some shrimp that were marinated in some olive oil, garlic and lime juice:
No grill marks, I know. That’s because the smoke detector was going off and Chris was fanning it and things were starting to get out of control so I just ended it. They were hot, just not as crispy as I would’ve liked. I am now forbidden, by the way, to use the grill pan, so if you’re looking for grill marks, you’ll have to visit a different blog.
With it, I tried out the kale chips that everyone has been talking about:
I really liked them - I just used salt and a little olive oil spray. Chris hated them, so I ended up eating way too many. Like all of them. Way more than this. It was a lot of kale.

Your kale chips look good… I never had kale before, let alone it in the “chip form”… but your picture makes me want to try it…

How do you make the kale chips?
Wait, so you mix all the ingredients and that’s it? Aren’t they sticky?
I’ve never tried pre-made polenta, is it any good?
Those look exactly like the cookies my mom used to make when I was a kid…haven’t thought of that in years!
I know what you mean about the cookies. I discovered the TJ’s chocolate chip cookies (although admitedly not as healthy) and it is bad to know I can make a single serving easily every single night. haha.
I made oatmeal cookies yesterday too. They’re my husband’s favorite and Charlotte and I made them as a surprise for his birthday.
They’re awful.
I don’t understand what happened because I’ve made them 100 times before.
Sniffle…sigh.
And now all I can think to do is give them to him anyway and tell him the baby made them all. by. herself.
That’s my only option right?
And I’m sorry, but kale chips?

Make them! They are good for you. In small quantities. I actually think next time I’ll reduce the maple syrup even more and see what happens.

I read a bunch of different methods online, but basically you wash the kale, cut it into bite size pieces, and spread it on cookie sheets in a near-single layer (some can overlap, but don’t mound it up or anything). I sprayed it with some pure olive oil spray and sprinkled it with salt, and then put it in the oven for about ten minutes at 350. When it’s crispy, it’s done - don’t let it get brown or it gets bitter. It’s really good. Like I said, Chris hated it but I loved it. I’ll eat anything with salt, though. Also, if you google “kale chips” you’ll find a ton of recipes.

Yeah, possibly I should have clarified. The recipe just trails off because it’s raw, so you don’t cook them. I stuck them in the fridge and they were still kind of soft, but they were only in there for a few hours. We kind of had to lick them off of the tin foil, it was pretty unattractive. If you left them in there for longer or maybe stuck them in the freezer for an hour, they’d be less sticky. Also, the batter is so good you could eat it with a spoon, seriously.

Yeah, it’s good. The kind from TJ’s doesn’t have any additives or anything, so it’s basically like homemade. It’s just not soft, like grits - it’s hard.

I’m sorry. I would go with the baby story. It’s very believable. Also, maybe you can whip these up as a consolation prize. They do have oatmeal in them, after all. And also, kale chips are my new best friend. I ate like three pans of them. Yes, I felt a little sick after, but I could never eat three pans of potato chips and not puke. Not that I’ve tried…
