Desperate times…

I offered Chris the last Skinny Cow bar after dinner tonight because I ate the rest am selfless. Then, I rummaged around in the back of the freezer, eyes closed, a prayer on my lips, and unearthed this:
Which I then ate. I don’t even want to know what they put in these to make them all gummy and gross, but that’s what they are. I am sure the fact that this bar has been in our freezer for months and was covered in a nice layer of burn was a contributor to its lovely taste and texture as well.
Anyway, rewinding to dinner, we had eggplant and FLAX parmesan, spinach, and a little focaccia that I picked up at the store earlier. I went in for a banana. I don’t know how this happens to me, but I’m glad it did, because garlic bread makes me happy.
There is cheese under that sauce, don’t you worry. I make a lazy version - the recipe is here. Don’t forget to add flax to the bread crumbs!
Earlier, before dinner, I had some hummus and crackers:

that bread looks amazing!! and ill have to try your eggplant parmesan recipe- I’m alwways really nervous about making egg plant though… even though I really enjoy it. Your hummus looks so good too!
oooo-i’ve done that. i’ve eaten nasty really old soy ice cream that was totally covered in ice and not good in the slightest. but i gobbled it all down. ew.
i just saw a commercial for the ultimate recipe showdown and they’re having new episodes. set your tivo…i know you love it. or maybe you should submit your fake bacon sandwich and we can all get really excited that you’re on the food network!
You crack me up…earlier today I rummaged through my freezer in hopes of finding a lost Skinny Cow cone (the cones are my fave and they are the Cow’s version of a drumsick). I seem to have developed a daily habit with those. I know there could be worse things to develop a daily habit with like Doritos or something so I’m not too worried about it yet. Once Skinny Cow (and wine, of course) becomes my dinner instead of an addition to it, then I will know I’ve hit rock bottom.
Can you possibly elaborate on the Gentle Leader thing? I have a pittbull who is pure muscle!!!! I can barely walk her (she’s still a pup) without getting narley welts on my hands from the leash. Thanks for the laughs::::::))))

At least Chris will eat the Skinny Cow stuff - my boyfriend wants the real icecream. Sometimes I can fake him out though by making him sugar free/fat free pudding. Hurray for fake sugar!

That bread was amazing. Eggplant is easy! Some people say to salt and drain it before you cook with it (is that why you’re nervous?) but I never do that and it’s always fine. Just make sure when you buy one, it feels kind of heavy for its size.

I LOVE those cones. I also think they’d be quite nice paired with a good pinot noir. About the gentle leader - I hear you. I had cuts all over my hand from the leash and my forearm ached from walking Jack. All I can say is, buy it. And then thank Robin and also PS, because they are the two readers who recommended it to me. They sell them at Petco or online. It is amazing and will totally change your life. Also, it doesn’t hurt the dog at all. I wouldn’t say Jack likes it, but it doesn’t really bother him. You want the head collar, not the harness. Let me know how it works out.

I love the Weight Watchers ice cream thingys with the chocolate cookie mashed up on them…is it called cookies n’ cream? I can’t remember, but when they’re not 8 month old freezer orphans, they’re de-lish!

Chris doesn’t eat meat, so he’s forced to eat vegetables. Or else he’d eat veggie burgers, grilled cheese and Sun Chips at every meal. Which actually he probably wouldn’t mind at all. Smother that stuff with breadcrumbs and cheese and Dane will never know that he’s not eating a bacon mat.
