Officially obsessed

…with this warm banana/yogurt mixture. I’m sorry, but I had it again today as a snack before dinner:
This is a banana (I think I might have the smallest bananas ever right now, I could probably eat three of them at once), a little over a teaspoon of brown sugar, and probably a cup of fat free plain yogurt. So good!
We were going to meet a friend for dinner, but decided to stay here so Jack won’t be alone for too long, since we’re both going out later. I just made a stir-fry with whole wheat spaghetti, broccoli, carrots, mushrooms, tofu, spinach and peppers. I fake a little peanut sesame sauce using peanut butter, soy sauce, a little maple syrup and the secret ingredient - Trader Joe’s sesame ginger sauce. It’s super easy and really good - I meant to take a picture but I forgot. Next time (we eat this a lot).
I’m going to meet my friend at a bar later…gonna try to keep the drinking (and the eating that tends to follow…) in check!

Bananas are nature’s candy bar! I can’t get enough of them with an kind of snack. (Especially if it involves peanut butter, mmm.)
I eat at least one banana every day - gotta love ‘em!

yum! I love home-made peanut sauce. I have all the ingredients except the TJ’s seasame ginger sauce… do you think I could substitute some ginger powder and water/milk?
yum that looks delicious! how long do you microwave the banana? do you add the yogurt on top at the end with the sugar or put it all in together?

VeggieGirl - I know, I used to never eat bananas for some reason - I eat about one every day now too.
Emma - You could definitely add ginger powder. I wouldn’t add milk, but maybe a little more soy sauce, a little sesame oil, and some rice wine vinegar. The TJ’s sauce is kind of thick, so your version might be a little bit thinner, but it would still taste good! The peanut butter thickens it too. You kind of just have to experiment a little (I’ve done it without the TJ’s sauce, and these are the things I used - I just don’t remember the proportions). Let me know how it turns out
Andrea - Thanks!! I actually heat the banana in a little pan on the stove, but microwaving it is a good idea. I have no idea why I didn’t think of that - I’ll try it next time. On the stove, I probably do it for 1 - 2 minutes, just until it’s warmed through. Then I add the brown sugar and it makes a little syrup. I put that all in a bowl, then pour the yogurt on top. I don’t think you should heat the yogurt, and I kind of like the hot/cold contrast. Hope that helps.
