The.Best.Dinner.Ever

Man I wish I could take credit for it! I used this recipe to make coconut curried shrimp, and for perhaps the first time in my life, I did not change a thing. I always improvise at least a little, but I had all the ingredients and I’m not very familiar with Thai food, so I stuck to the directions. Oh wait - that’s a lie. I used light coconut milk instead of the full fat. Still, that’s barely a change. I encourage you to make this for dinner tomorrow. It’s easy, and you will be very happy. We had it over quinoa instead of rice, and I added the broccoli on the side for a vegetable.
Next time, I’ll probably add more vegetables to the actual curry - I’m thinking bok choy would be good??? The broccoli was good with it too, and I think it would be just as good if you used tofu instead of shrimp. Well, almost as good - I love shrimp!

And for the sake of full disclosure, I’ve eaten a chocolate covered raisin here or there throughout the day too. I can’t help it, Chris keeps taking them out of the cabinet and they are so tempting!
Tomorrow I have to go into the city for work in the morning, so I’m going to bring a Larabar as a snack. And I may just have to hit up Starbucks…we’ll see!


That dinner looks delish! I’ve had some shrimp in my freezer that I’ve been wondering what to do with, I’m going to have to try it for sure!
